| รายละเอียด | ในช่วงที่ผ่านมามีความสนใจอย่างมากในการสร้างผลิตภัณฑ์อาหารชนิดใหม่ที่ประกอบด้วย โพรไบโอติกอันเนื่องจากความต้องการอาหารเพื่อสุขภาพที่เพิ่มมากขึ้น ในงานนี้มีวัตถุประสงค์เพื่อพัฒนาเยลลี่ที่มีส่วนผสมของโพรไบโอติกส์ Bacillus amyloliquefaciens ร่วมกับพรีไบโอติกส์จากจมูกข้าวสาลี และแคนนาบิไดออล (Cannabidiol; CBD) และเพื่อประเมินความมีชีวิตของโพรไบโอติกส์และกิจกรรมต้านอนุมูลอิสระในเยลลี่ โดยสารประกอบพรีไบโอติกส์ที่สกัดจากจมูกข้าวสาลีส่งเสริมการเจริญของโพรไบโอติกส์ Bacillus amyloliquefaciens ที่ 8.54 log CFU/ml ในการศึกษานี้มีเยลลี่ 3 สูตร ประกอบด้วยสูตร G001 (0% CBD, โพรไบโอติกส์ 9.0 log CFU/ml, สูตร G002 (0.01% CBD, ไม่มีพรีไบโอติกส์ โพรไบโอติกส์ 9.0 log CFU/ml) และสูตร G003 (0.01% CBD, พรีไบโอติกส์ร้อยละ 1.0 และโพรไบโอติกส์ 9.0 log CFU/ml) อัตราการรอดชีวิตของโพรไบโอติกส์หลังการเก็บสูงสุดพบในสูตร G002 (93.15%) แต่สูตร G003 เป็นสูตรที่มีกิจกรรมต้านอนุมูลอิสระสูงสุด (37.15%) เจลลี่ที่พัฒนาขึ้นที่ประกอบด้วยโพรไบโอติกส์ พรีไบโอติกส์จากจมูกข้าวสาลี และ CBD ช่วยให้สามารถผลิตผลิตภัณฑ์ที่มีมูลค่าสูงขึ้นได้

The aims of this study were to develop jelly supplemented with probiotics Bacillus amyloliquefaciens, prebiotic from wheat germ and cannabidiol (CBD) and to evaluate viable probiotic count and antioxidant activity. The prebiotic compounds extracted from wheat germ showed enhancing the growth of probiotic Bacillus amyloliquefaciens at 8.54 log CFU/ml. In this study three formula of jelly were made including G001 (0% CBD, no prebiotic, probiotic 9.0 log CFU/ml), G002 (0.01% CBD, no prebiotic, probiotic 9.0 log CFU/ml) and G003 (0.01% CBD, 1% prebiotic, probiotics 9.0 log CFU/ml). The highest survival rate of probiotic after kept for 28 days was found in G002 (93.15%), but the formula G003 was showed the highest antioxidant activity (37.15%). The developed jelly containing probiotic, prebiotic from wheat germ and CBD simply allowed to produce higher value products.
